Finding the right edge

A smooth blade allows for delicate cuts and precise slicing. Moreover, they are easier to sharpen. However, they are ineffective for cutting hard synthetic materials or fibrous materials and dull quickly.
A serrated blade effectively cuts materials requiring force or sawing motions. However, its cut is not precise. This type of edge is rather selective, as it tears rather than cuts.
Know that there are mixed blades for those who cannot choose between smooth or serrated. The mixed blade ensures versatility for fine cutting with the smooth part and effective sawing with the serrated part.
Finding the right tang size
The tang is the hidden part of the blade located inside the handle. Provided it is compatible with your original handle, it is advisable to opt for the longer tang. Indeed, if it runs the full length of the handle, your blade will be stronger and your knife will be better balanced.
