The santoku knife is the Japanese version of the chef's knife. It was created by the Japanese to have a versatile kitchen utensil. The Santoku can indeed perform several tasks, precisely three. It allows cutting or slicing food, both meat and fish. It also allows for mincing vegetables, herbs or even hard foods. Finally, it is used to slice meat. For the knife to perform all these tasks, it must have a curved blade with a fairly thin cutting edge. The santoku is a true standard in Japan.
Fixed blade knives are the traditional knife models. They are generally found in the kitchen, for preparing all types of food, or at the table during meals. These types of knives are not practical when traveling, unless they are carried in their sheath, for safety.
