Originating from Asia, the Santoku Knife is the Japanese chef's knife. It is used notably for slicing, dicing, and mincing food during preparation. To distinguish itself from a standard chef's knife, the santoku has a flat blade with a curved tip, diagonally from the spine to the edge. Moreover, the cutting technique is different from that of a European chef's knife. With the latter, you need to hold the knife horizontally by its handle. This allows for slicing with a diagonal movement from back to front.
Fixed blade knives are characterized by their straight and immobile blades. This is the most traditional way of attaching the blade to the knife handle. Most knives used in cooking, such as the santoku or chef's knife, have fixed blades.
